My Mexican Fajita Feast
I wanted something quick, easy and tasty to make for dinner tonight. One of my all time favourite dinners is fajitas! So moreish.
Fajitas are also perfect for sharing. We had a couple of friends round to eat with us and fajitas are a great self service option that can be easily adapted to your own and your guests personal taste.
The spice mix is listed below and can also be adapted to your own personal taste. Add more chilli and cayenne if you like it hotter or leave it out all together if you can't handle the heat.
I love to add a bit of crunch to my fajitas and pico de gallo is light and zesty as well as being simple and easy to prepare.
Fajitas
4 chicken breasts
2 bell peppers in the colour of your choice, sliced
1 onion, sliced
4 tbsp of olive oil
2 tbsp of lemon juice
1) Fry the onions in 2 tbsp of olive oil for 5-7 minutes until soft and golden
2) Add the bell peppers and fry for another 5 minutes then remove the mix from the pan
3) Fry the chicken in the remaining 2 tbsp of olive oil and add the fajita spice mix (see below)
4) Stir in onion and pepper mix
5) Add lemon juice and serve with Pico de Gallo (see below), grated cheese, tortillas and sour cream
Fajita Spice Mix
1 tsp garlic powder
1tsp onion powder
1 tsp salt
1 tsp pepper
1 tsp smoked paprika
1 tsp cayenne pepper
1 tsp chilli powder
1 tbsp cayenne
1 tbsp oregano
Combine all spices to make fajita spice mix
Pico de Gallo
2 tomatoes
1 garlic clove
2 tbsp lemon juice
1/2 red onion
2 tbsp olive oil
salt and pepper
1) Finely chop and then combine the, garlic clove and onion in a bowl
2) Add lemon juice and olive oil then season with salt and pepper
